Future creator of Zing Bars, Sandi Kaplan was shocked when she heard the news.  Like almost 1 in 100 Americans, she had been diagnosed with Celiac Disease.

Sandi's Story

Sandi's presentation of Celiac Disease was typical in that it was atypical.  No irritable bowel syndrome, no classic signs of malabsorption, no conspicuous weight loss or weight gain.  In fact, Sandi had no gastrointestinal symptoms whatsoever.

Sandi's lone symptom was a persistent low-grade fatigue, attributed to an iron-deficiency anemia that had been with her for as long as she could remember.  Doctors would simply chastise her for not taking her iron supplement as regularly as perhaps she should.

After many years and many attempts to raise her iron levels, increasing red meat intake, adding Vitamin C to aid in iron absorption and experimenting with alternate forms of iron supplements, Sandi's doctor informed her that iron injections were the only remaining therapeutic course of action.

Meanwhile, Sandi's husband Mike was attending Bastyr University, studying to become a naturopathic physician.  Mike had discovered that he had Celiac Disease several years earlier.  Mike's Celiac Disease presentation was far more "typical."  He had chronic gastrointestinal symptoms with frequent upper respiratory and ear infections as a child.  As an adult, Mike had a persistent tendency toward being underweight.  The discovery that he had Celiac Disease and his strict adherence to a gluten free diet turned his health and life around.

Together, Sandi and Mike turned to the research.  They soon discovered that some clinicians regard Celiac Disease as a chief condition that should be investigated in chronic persistent iron-deficiency anemia.

After a simple blood test and a switch to a gluten free diet, Sandi had her answer: she had Celiac Disease.

As registered dietitians, Sandi and her colleagues created the Zing Bars as a means to offer a nutritionally balanced snack that is both gluten free and delicious.
